I made another dish with some of my crab meat. This time I made a very simple crab cakes recipe.
I did not coat my crab cakes with breadcrumbs as I am not a big fan of bread crumbed stuff really. If you do not want to use bread crumbs like me you will have to fry your crab cakes gently as they are softer and can break easier.
I bind my crab cakes with just an egg. I wanted them not mess about too much so I can taste the crab. I used the ratio 1:2, one being crab meat and 2 being mashed potatoes.
Please do not forget to season well.
Crab cakes
Ingredients
- 1 cup Fresh crab meat
- 2 cups Mashed potatoes
- Coriander
- Salt & pepper
- Minced fresh red chillies
- 1 Egg
Notes
NOTE – You might like to add carrots and green peas to your crab cakes. You can also use other herbs like parsley and chives or spring onions. It is just nice to make stuff when I have time and freeze them for a fast lunch like today when I am too busy to cook.
NOTE – You can also egg wash and bread crumb them or use panko crumbs to coat the crab cakes before freezing. I am trying to be a tad low carbohydrates. The truth is i am not a big fan of bread crumbs.
The sweet boy! Took an hour of my life Boiling 3 potatoes Mashed them Mix with the white and brown crab meat Season. Coriander, chilli and an egg Mix well gently. Form into balls then flatten them a bit. Ready to be frozen Into freezer for 30 minutes Then packed into bags and they are ready. My emergency food as I called everything I made for my freezer. Today I took out 2 to pan fry then into 200C oven for 20 minuted.
